{"id":309922,"date":"2025-12-25T15:30:00","date_gmt":"2025-12-25T14:30:00","guid":{"rendered":"https:\/\/legrandcontinent.eu\/fr\/?p=309922"},"modified":"2025-12-23T21:02:42","modified_gmt":"2025-12-23T20:02:42","slug":"un-noel-marque-par-des-prix-du-chocolat-de-plus-en-plus-eleves","status":"publish","type":"post","link":"https:\/\/legrandcontinent.eu\/fr\/2025\/12\/25\/un-noel-marque-par-des-prix-du-chocolat-de-plus-en-plus-eleves\/","title":{"rendered":"Un No\u00ebl marqu\u00e9 par des prix du chocolat de plus en plus \u00e9lev\u00e9s"},"content":{"rendered":"\n<p>Les prix du cacao ont consid\u00e9rablement augment\u00e9 depuis le d\u00e9but de l\u2019ann\u00e9e 2024 en raison de la propagation du virus de l\u2019\u0153d\u00e8me des pousses du cacaoyer (CSSV), qui a d\u00e9vast\u00e9 500 000 hectares rien qu\u2019au Ghana, et du changement climatique, qui favorise des conditions m\u00e9t\u00e9orologiques extr\u00eames, les maladies et les parasites.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Une tonne de cacao s\u2019\u00e9change aujourd\u2019hui contre 6 000 dollars \u00e0 la bourse de New York, soit deux fois moins qu\u2019en d\u00e9cembre 2024, lorsqu\u2019un pic \u00e0 12 000 dollars la tonne avait \u00e9t\u00e9 atteint.<\/li>\n\n\n\n<li>Le prix du cacao demeure toutefois consid\u00e9rablement plus \u00e9lev\u00e9 que durant la p\u00e9riode 2020-2023, lorsqu\u2019une tonne co\u00fbtait en moyenne entre 2 000 et 3 000 dollars.<\/li>\n<\/ul>\n\n\n\n<div class=\"iframe-container wp-block-image wp-block-image-medium  iframe-dw\">\n\t<div>\n\t\t<iframe class=\"absolute w-full h-full pin-t pin-l\" title=\"titolo\" aria-label=\"Interactive line chart\" src=\"\/\/datawrapper.dwcdn.net\/ZP6eb\" scrolling=\"no\" frameborder=\"0\"><\/iframe>\n\t<\/div>\n<\/div>\n\n\n\n<p>Si le march\u00e9 semble \u00eatre en voie de se stabiliser, il pourrait s&rsquo;agir plut\u00f4t d\u2019un r\u00e9pit passager. Pr\u00e8s des deux-tiers (environ 60&#160;%) de la production mondiale de cacao est aujourd\u2019hui concentr\u00e9e en Afrique de l\u2019Ouest, notamment en C\u00f4te d&rsquo;Ivoire et au Ghana, o\u00f9 celle-ci est domin\u00e9e par de petits exploitants qui ne sont pas en mesure d\u2019investir suffisamment pour renouveler leurs plants de cacaoyers et s\u2019adapter au changement climatique.<\/p>\n\n\n\n<p>Selon une \u00e9tude de chercheurs de l\u2019Universit\u00e9 d\u2019Oxford publi\u00e9e en f\u00e9vrier, les temp\u00e9ratures \u00e9lev\u00e9es ont un impact direct sur la production de cacao.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Les sites de production situ\u00e9s dans trois des principaux pays producteurs (Br\u00e9sil, Ghana et Indon\u00e9sie) o\u00f9 les temp\u00e9ratures \u00e9taient jusqu&rsquo;\u00e0 7 degr\u00e9s plus \u00e9lev\u00e9es ont enregistr\u00e9 des rendements de cacao inf\u00e9rieurs de 20 \u00e0 31&#160;%&nbsp;<span class='whitespace-nowrap'><span id='easy-footnote-1-309922' class='easy-footnote-margin-adjust'><\/span><span class='easy-footnote'><a href='https:\/\/legrandcontinent.eu\/fr\/2025\/12\/25\/un-noel-marque-par-des-prix-du-chocolat-de-plus-en-plus-eleves\/#easy-footnote-bottom-1-309922' title='Lander, Tonya A., Atta-Boateng, enregistr\u00e9 les plus fortes hausses au Ghana et en C\u00f4te d\u2019Ivoire.\u00a0<\/li>\n\n\n\n<li>La r\u00e9gion conna\u00eet chaque ann\u00e9e trois semaines de plus par an au cours desquelles la temp\u00e9rature est sup\u00e9rieure \u00e0 32\u00b0C en raison du changement climatique \u2014 soit une temp\u00e9rature sup\u00e9rieure \u00e0 la plage optimale pour les cacaoyers&nbsp;<span cacao, les chocolatiers explorent des alternatives.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>L\u2019une des techniques utilis\u00e9es par certains industriels, invent\u00e9e d\u00e8s le d\u00e9but des ann\u00e9es 1800 par le chimiste et chocolatier n\u00e9erlandais Coenraad Johannes van Houten, est l&rsquo;alcalinisation du chocolat.<\/li>\n\n\n\n<li>Cette m\u00e9thode consiste \u00e0 traiter le cacao avec des agents alcalinisants comme le carbonate de potassium afin de lisser et modifier le go\u00fbt tout en l\u2019adoucissant, ce qui permet d\u2019utiliser moins de cacao dans les recettes.<\/li>\n\n\n\n<li>D\u2019autres entreprises, comme l\u2019allemand Planet A Foods, cherchent \u00e0 remplacer totalement le cacao par des graines de tournesol ferment\u00e9es et torr\u00e9fi\u00e9es, un produit qu\u2019ils appellent le \u00ab&#160;ChoViva&#160;\u00bb&nbsp;<span class='whitespace-nowrap'><span id='easy-footnote-3-309922'
